Healthy Lactation Cookies

I always double this recipe and add 2 extra eggs (totalling 6 eggs) - they can come out a bit dry otherwise! Bake for 15 minutes.

These healthy lactation cookies are loaded with oats, flaxseed and chocolate chips - great for boosting milk supply postpartum. Full recipe at elisabethandbutter.com

Instructions + ingredients

• 1/3 cup coconut oil, melted

• ½ cup coconut sugar

• 2 eggs

• 2 tsp vanilla extract

• 1 ½ cups oat flour

• 1 ½ cups old fashioned oats

• 1 tsp baking soda

• ½ tsp cinnamon

• ¼ tsp salt

• 1/3 cup ground flaxseed

• 1 cup chocolate chips

• Flaky sea salt for topping

• Combine coconut oil, coconut sugar, eggs and vanilla and mix well.

• Add dry ingredients and stir until combined. Fold in chocolate chips.

• Roll into balls and place on baking sheet. Bake at 175°C for 15 minutes. Sprinkle with flaky sea salt while warm. Cookies
