Banana Chocolate Chip Slice

This is actually the FIRST thing I ate after giving birth to my daughter!

This Banana Chocolate Chip Slice is the perfect recipe to use up your over-ripe bananas. Not only is it delicious, but it's super quick and easy to make. Because it's cooked in a tray as a slice, there's no need to ice it like you might a cake. There are no muffin cases to line and, you can cut the pieces to whatever size you like.

Instructions + ingredients

  • 150g butter

  • 150g brown sugar

  • 1 tsp vanilla essence

  • 2 ripe bananas, mashed

  • 2 eggs

  • 1 cup plain flour, 150g

  • 1 tsp baking powder

  • ¾ cup chocolate chips

To serve

  • 1 tsp Icing sugar

  1. Preheat the oven to 170°C fan bake. Line a 17 x 27cm tin with baking paper. 

  2. In a large bowl melt butter in the microwave in 30 second bursts. Add the sugar and whisk until combined.

  3. Add the vanilla essence, mashed banana, and eggs. Whisk until everything comes together.

  4. Sift in the flour and baking powder. Fold everything together and whisk out any lumps. Stir in ½ cup chocolate chips.

  5. Pour the mixture into a lined slice tin then scatter over the remaining ¼ cup chocolate chips.

  6. Bake for 20-25 minutes until the slice feels firm on the surface and a skewer inserted comes out clean. 

  7. Allow to cool before cutting into squares. Dust with icing sugar and serve.

  • Store in an airtight container in the pantry for up to 4 days. 

  • Any kind of chocolate chip or drop will work in this recipe, you could even use chopped up chocolate.
