Bacon, Spinach + Egg Cups

These are so delicious and freeze really well too! I normally freeze them in 6s and then once thawed, just pop in the microwave for a minute to warm it up. Super yum with a little swirl of Kewpie mayo on the top when serving.

Measurements are rough - depends on how many you’d like to make! Recipe below is for around 12.

Instructions + ingredients

  • Packet or bacon (you’ll use one rasher per cup)

  • 10-12 eggs

  • Dash of milk for the eggs, around 100-150ml

  • Salt and pepper

  • Bag of fresh spinach, chopped up

  • Grated cheese to top

  • Pinenuts

  • Paprika

  1. Preheat oven to 180 degrees C on fan bake

  2. Line a muffin pan with one rasher of bacon per cup

  3. Whisk together eggs and milk, season with salt and pepper

  4. Chop up spinach and whisk into egg mixture

  5. Pour this mixture into the bacon laid cups, I usually use a big spoon to spoon it in so it doesn’t mess everywhere and I get a consistent ratio of egg mixture to spinach

  6. Top with some grated cheese

  7. Sprinkle with pinenuts

  8. Dust with a little bit of paprika

  9. Bake for about 15 minutes, they actually rise up quite a bit!

Check that they’re cooked through by pushing a spoon down on a cup and making sure no raw egg mixture comes out.

Voila! So yum, I absolutely love these as an easy to eat breakfast (or any time of the day snack) that’s nutritious and packed with protein.
